Crock Pot Beef Stroganoff-very easy

2-3 pounds beef for beef stew
1 pkg sliced baby bella mushrooms
1 onion,chopped
1 can golden mushroom soup
1 can cream of onion soup
8 oz. sour cream
1/2 pkg cream cheese
salt&pepper
egg noodles,cooked

Add beef,chopped onion,mushrooms,soups,s alt and pepper to crock pot. Cook on low for 6-7 hours. The add sour cream and cream cheese til melted completely and blended. Pour over egg noodles.

What was for dinner tonight?

My daughter cooked for us, yay! It was delicious: Mediterranean Lemon Pepper Chicken!

3-4 chicken breasts
2 lemons
2-3 tablespoons olive oil
1 large sweet onion, finely chopped
4 cloves garlic, crushed
1 teaspoon lemon pepper
2 cups chicken broth or water
1 can chickpeas or garbanzos, drained
1 tablespoon fresh parsley, minced
1 tablespoon Wondra or flour (optional)

Cut lemons into 2 halves each. Rub chicken with one lemon half.
In a large Dutch oven, saute onion in olive oil until soft and golden colored
Rub chicken with lemon pepper. Sear chicken on both sides in the onion and olive oil. Add garlic and saute for 1 more minute or until garlic is lightly colored. Add broth or water and drained chickpeas or garbanzos, the juice from the lemons and salt and pepper, to taste
Bring to a boil, reduce heat, cover and simmer for about 40 minutes or just until chicken is tender (depends on the size of the chicken breasts).
If a thicker sauce is desired, stir flour or Wondra into sauce during final 15 minutes of cooking. 10 minutes before serving, stir in parsley (save a pinch for garnishing). Taste and adjust seasoning adding salt and pepper to taste.
Serve chicken with chickpeas or garbanzos on the side, top with sauce and a sprinkle of parsley.
Leftovers can be refrigerated in the sauce and served the next day over pasta or rice or sprinkled with mozzarella and baked until cheese melts and chicken has reheated.

INSTANT STRAWBERRY ICE CREAM

24 ounces frozen sweetened strawberries, cut into large chunks
1/2 cup sugar, plus
1 tablespoon sugar
1 1/2 cups heavy cream

Place berries in blender. Whisk sugar into cream. With blender going, slowly add cream through opening in lid, stopping to stir the mixture 3 or 4 times so the ice cream is smooth, with small bits of berries.
Transfer to shallow pan and freeze to a scoopable texture, about 2 hours. Garnish with fresh strawberries.

BACON WRAPPED PORK SMOTHERED IN BEANS

boneless pork chops or cutlets
package of bacon
1or 2 large can of favorite beans
tooth picks
baking dish

Take the pork an using a rolling pin or meat tenderizer smash the pork to flatten a little once you have done that you put some of the beans on it an roll it.Once rolled put a slice or two of the raw bacon on it an use a tooth pick to hold it together then place in a pan.Repeat this till all pork is rolled then pour the remaining beans an more if you want. Place in over for about an hour. Serve with your favorite veggie.

PEANUT BUTTER WAFFLE TOAST


1 1/4 cups milk
1 cup Bisquick mix
1/2 cup peanut butter
2 tablespoons granulated sugar
1 teaspoon vanilla
1 egg
6 to 8 slices bread
6 to 8 tablespoons miniature semisweet chocolate chips
Powdered sugar, if desired

Heat waffle iron; grease with shortening if necessary (or spray with cooking spray before heating).
In medium bowl, stir milk, Bisquick mix, peanut butter, granulated sugar, vanilla and egg until well blended. Carefully dip bread into batter on both sides. Place in waffle iron; close lid.
Bake about 2 minutes or until steaming stops and "toast" is golden. Carefully remove waffle toast. Sprinkle each waffle with 1 tablespoon chocolate chips and powdered sugar.

EASY COFFEE CAKE....


1 package yellow cake mix
1/2 cup oil
1 package instant vanilla pudding
1 cup sour cream
4 eggs
1/2 cup sugar
1 teaspoon cinnamon
1/2 cup chopped nuts

Preheat oven to 325°F.
Beat cake mix, oil, pudding, sour cream and eggs together very well.
In a small bowl, mix the sugar, cinnamon, and nuts for filling, reserving a few tablespoons to sprinkle on top.
Put half the cake mixture in a greased tube pan.
Pour on the filling mixture on top, then pour on the remaining cake mixture. Sprinkle the extra filling on the top.
Bake at 325°F for 45 minutes

BRAIDED EGG BREAD...

2 (.25 ounce) packages active dry yeast
1/2 cup warm water (110 degrees F/45 degrees C)
2 cups hot milk
1/2 cup white sugar
1/2 cup butter
2 teaspoons salt
1/2 cup water
5 eggs
11 cups all-purpose flour
1 egg
2 tablespoons sesame seeds or poppy seeds


Proof yeast and 1/2 cup warm water in a large mixing bowl.
Combine hot milk, sugar, butter, salt, and 1/2 cup water in a medium bowl. Cool to 110 degrees.
In small bowl, slightly beat 5 eggs, then add to cooled milk mixture. Add milk mixture to yeast mixture. Add 2 cups flour and beat until smooth. Slowly add remaining flour until it forms a stiff dough. Knead on a floured board for 10 minutes (5 minutes with a bread hook). Place in a large glass or plastic bowl lightly greased. Turn dough over to grease both sides. Cover and let rise in a warm, dark place until doubled in volume, approximately 60 minutes.
Punch down, cover, and let rise again until double, approximately 30 minutes.
Punch again, and form into three parts. Form each part into a 20-inch roll. Braid rolls on a large, greased cookie sheet. Cover and let rise until doubled.
Lightly beat remaining egg and brush loaf. Sprinkle with sesame seeds or poppy seeds. Bake in preheated 350 degree F (175 degrees C) oven for about 55 minutes until nicely browned. May be made into two regular sized loaves. Reduce baking time slightly.

ITALIAN POLENTA.....


Precooked polenta roll
Shredded Italian cheese blend
Lean ground beef
Chunky pasta sauce

Heat a bit of oil in a large nonstick grill pan or skillet over medium-high heat. Cut a 1-pound polenta roll into 12 slices. Cook slices until lightly browned on both sides, about 15 minutes in all. Remove pan from heat and sprinkle polenta with about 1/2 cup of cheese. Cover with a lid or foil to melt the cheese. Meanwhile, brown 1/2 pound of beef in another pan. Add about 2 cups of pasta sauce, heat through, and season with salt and pepper to taste. Put the sauce on 4 plates. Top with the polenta and sprinkle with 1/4 cup of cheese.
