How soon does meat go bad?

I forgot a very expensive piece of meat (no bone) outside last night and only found it this morning. It was at room temperature for about 9 hours, could also be 10, but not more than 12, lol. Is it ok if I still eat it?

FREEZE that sucker!

Then, cook it very thoroughly. If it smells alright, tastes alright, it IS alright.

Freezing kills bacteria, so does cooking. Unless it's already obviously spoiled (like---it stinks so bad you want to retch) then it'll be fine.

Off the cuff? No.

However, several factors can play into it.

- What was the temperature outside last night?
- Was the meat completely sealed in something?
- How well do you plan on cooking it?

If it were less than 55* over night, and the meat sealed, then it shouldn't be bad. Also, the more well done you cook it the better off you'll be.

If you have a tender stomach, I would recommend throwing it out just in case. My wife had a piece of meat in Mexico where the meat was not refrigerated. It caused a bacterial infection that went misdiagnosed for 5 years and developed into Chrone's Disease.

General rule of thumb is that food shouldn't sit out for longer than 2 hours. Once you hit the 2 hour mark, bacteria starts to grow like crazy.

That said, you're usually safe w/double that, but I would definitely not push it beyond that. Good way to get food poisoning!

So yeah, toss that sucker out!

If it was frozen and defrosted those hours you could, but other than that I wouldn't.

What was the temp. where the meat spend the night. You said you left it outside but then you said room temp.
